This 5-ingredient vegetarian chili is the definition of a lazy girl dinner — quick, hearty, and full of flavor thanks to Trader Joe’s soy chorizo. It’s one of those throw-it-in-a-pot meals that somehow tastes like you spent hours simmering it. Perfect for busy weeknights, chilly fall evenings, or anytime you just don’t feel like cooking (but still want something comforting and delicious).
Ingredients
For the Soup:
Soy Chorizo
2 cans of Vegetarian Chili
1 cup of water
Top with:
Corn Bread
Sour Cream
Corn chips for added crunch!
Other topping ideas- Avocado, cheddar cheese, cilantro.. Have fun with it!
Preheat oven to 350 degrees
Prepare cornbread, follow instructions on the box
Add canned chili to pot, bring to a simmer
Add chorizo, break it up, cover and simmer for 10 minutes
Let Cornbread rest for 10 minutes
Plate, garnish and serve!
